Pintado Fish Stew is a traditional Brazilian dish, especially appreciated in the Midwest region, where the pintado fish is widely used in various local recipes. Pintado is a freshwater fish with a mild flavor and delicate texture, which, combined with cassava and fresh seasonings, creates a rich and flavorful broth.
Whether for a family meal or to impress friends, this recipe promises to bring the best of Brazilian regional flavors to the table. Shall we learn how to prepare this traditional delight?

Ingredients:
- 1 kg cassava
- 600 g pintado fish
- 2 tomatoes
- 1 onion
- 2 garlic cloves
- 1 tablespoon paprika
- Salt to taste
- Olive oil or cooking oil for frying seasonings
- Green onions to taste
Instructions:
- Start by slicing the onion, dicing the tomato, and chopping the garlic. We’ll use half of these to prepare the cassava broth and the other half with the fish. In the end, we’ll combine everything.
- Cut the cassava into roughly 3 cm cubes and remove the tough core from the center.
- In a pressure cooker, sauté half of the onion and garlic with a little olive oil.
- Add the paprika and half of the tomatoes, stirring well.
- Next, add the cassava, salt to taste (I used half a tablespoon), and water to cover the cassava.
- Close the cooker, bring to pressure, and cook for 15 minutes before turning off the heat.
While waiting for the pressure to release, let’s prepare the fish.
- Cut the fish into pieces and season with salt to taste (I used half a tablespoon).
- In a large pan, fry the remaining onion and garlic.
- Add the remaining tomato and the fish. Sauté the fish with the seasonings. If needed, add a little water to prevent burning.
- Add the cassava broth and cook a bit longer. If there’s not enough broth, you can add more water. Let it simmer until it reaches a boil.
- After turning off the heat, add chopped green onions.
So, how did you like the Pintado Fish Stew? It’s easy to prepare and pairs wonderfully with white rice. I hope you enjoyed it, and may this recipe become one of your favorites to share with family and friends.
